Tofu Scramble with Greens and Herbs

Ingredients:

  • 1 block (14 oz) firm tofu, drained and crumbled
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh greens (such as spinach, kale, or Swiss chard), chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh herbs (such as parsley, cilantro, or basil)
  • Optional toppings: sliced avocado, cherry tomatoes, nutritional yeast

Instructions:

1. Sauté the Aromatics:

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.

2. Add Tofu and Spices:

  • Add crumbled tofu to the skillet. Sprinkle turmeric powder, paprika, salt, and pepper over the tofu. Stir well to combine and coat the tofu evenly with the spices.

3. Cook the Tofu:

  • Cook the tofu mixture for 5-6 minutes, stirring occasionally, until the tofu is heated through and lightly golden.

4. Add Greens:

  • Add chopped fresh greens to the skillet. Stir well to combine with the tofu mixture.

5. Sauté until Greens are Wilted:

  • Cook for an additional 2-3 minutes, or until the greens are wilted and tender.

6. Add Fresh Herbs:

  • Stir in chopped fresh herbs (such as parsley, cilantro, or basil). Cook for another minute to allow the flavors to meld.

7. Adjust Seasoning and Serve:

  • Taste and adjust seasoning with salt and pepper if needed.

8. Serve:

  • Serve the Tofu Scramble with Greens and Herbs hot, garnished with optional toppings like sliced avocado, cherry tomatoes, or nutritional yeast.
