Prickly Pear Lemonade

Ingredients:

  • 2-3 ripe prickly pears (also known as cactus pears)
  • 4-5 fresh lemons
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cups water
  • Ice cubes
  • Fresh mint leaves (for garnish, optional)

Instructions:

1. Prepare the Prickly Pears:

a. Carefully handle the prickly pears, as they have small thorns. Wear gloves if necessary.

b. Cut off both ends of each prickly pear, then make a lengthwise slit along the skin.

c. Use your fingers to gently peel off the skin and reveal the vibrant, fleshy interior.

d. Chop the peeled prickly pears into chunks.

2. Extract the Juice:

a. Place the chopped prickly pear pieces into a blender or food processor.

b. Blend until you have a smooth puree.

c. Strain the puree through a fine-mesh strainer or cheesecloth to remove any seeds and thicken bits. Collect the vibrant juice in a bowl.

3. Juice the Lemons:

a. Squeeze the juice from the fresh lemons into a separate bowl.

4. Make the Lemonade Base:

a. In a pitcher, combine the freshly squeezed lemon juice, prickly pear juice, granulated sugar, and water.

b. Stir well to dissolve the sugar. Adjust the sweetness to your preference by adding more or less sugar.

5. Chill and Serve:

a. Place the pitcher in the refrigerator to chill for at least 30 minutes.

6. Serve and Enjoy:

a. Fill glasses with ice cubes and pour the Prickly Pear Lemonade over the ice.

b. Garnish with fresh mint leaves, if desired.
